Egg-Cellent Eggs

So, my Brother and I got our bake on last night (as you do on a Saturday night). We now have our very own take on an ‘Egg-Cellent Egg’. We have endless easter eggs in our house so we felt it was time to spice things up a little! 

Prepare yourself for our DELISH combo…
OREOS with...
REESE'S peanut butter cups...
covered in yet more chocolate to create the fried egg shape!

These Egg-Cellent Eggs are super easy, cheap and fun to make! So, get your Reese's at the ready and let’s have some OREO fun…

What you need to participate in the fun:
(Definitely purchase the double cream Oreos if you can hunt them down.)




 Step 1: Remove the top biscuit from your OREO.


Step 2: Place on your Reese's peanut butter cup.


Step 3: Take your second Oreo, break the bottom off and place on top of your PB cup.


Step 4: It's the fun part...get dunking!


Step 5: Place on a baking sheet and cover in more chocolate to create your splattered EGG look!


Step 6: Once dry peel them away from the baking sheet (cut where they have stuck together). 


Step 7: There you have it, your Egg-Cellent Egg!


Step 8: Cut open and enjoy (this is one we did without the chocolate fried egg look).



You will have lots of Oreo plain biscuits left (if you haven't munched away on them).


So, get some frosting and don't let these go to waste!


I'm sure they will be equally as yum!

Coconut and raspberry cake

My Nan bakes the BEST cakes. Her signature coffee sponge is outrageously light and fluffy and literally knocks your socks off. Unfortunately I can’t do her cakes justice through words but honestly my Nan (or should I say Mrs Kipling) provides a bloomin’ well good cake!

With Nan’s birthday approaching I was feeling VERY pressured. What on earth do you bake Mrs Kipling herself? I was debating whether I should cheat, pop to M&S, purchase a cake, add some toppings and shaa bang...a homemade cake! I resisted the temptation. I plucked up the courage and decided to bake Nan a coconut and raspberry cake.

Fingers crossed I haven’t let my Nan down!

I followed the recipe from Baking Mad so feel free to check their website out! My cake unfortunately hasn't got 4 layers - it has 2! I was TOO heavy handed (as usual) and broke my first sponge! Ooops! BUT I didn't bin the sponge, it got recycled into something scrummy! I will reveal all at the end of this post (please tell me you're excited). 

Right, 

What you will need: 

For the cake:

175g Self Raising Flour
175g Butter Softened
175g Golden Caster Sugar
1 tsp Baking powder
3 Free Range Eggs
1 tsp Vanilla Extract
75g Desiccated Coconut

For the filling and icing:

7 tbsp Seedless Raspberry Jam
50g Shredded coconut
450g Mascarpone
1 tsp Vanilla Extract
1 tbsp Icing Sugar

For decoration:

Additional 110g Desiccated Coconut

(Personally I would double the cake ingredients to achieve a better 'layer' result).


1. Mix all of the ingredients listed for the 'cake' in a bowl. Once you have a nice smooth mixture add the desiccated coconut...




2. When all of the coconut is mixed in pour the mixture into your greased cake tins (divide evenly between two) and then place in the oven for around 30 minutes on 170°C,325°F, gas 3.



3. Whilst your coconut delight is baking away it's time to make your icing. Mix together everything listed for 'filling and icing' apart from the jam. You will get a nice thick coconut texture like this...




4. Yes, 30 minutes is over! Before removing from the oven check that your cake is springy to touch and golden, then leave to cool for 5 minutes and then carefully turn them out onto wire racks. I learnt my lesson from being a heavy handed beast so please go careful! 

5. Spread your jam on both sponges and then add your coconut icing (that's if you haven't already licked the entire bowl). Now place one sponge on top of another (jam sides facing together).




6. This is the messy part! Cover your whole cake with the icing, then sprinkle with coconut and decorate with raspberries...



7. Your coconut and raspberry cake is now READY!



8. If you are baking this for a loved one then do try your best NOT to cut yourself a slice off! 





If I had doubled up on the cake mixture then it would have looked a lot more powerful. More layers the better right? However I didn't, SO lets hope Nan isn't disappointed with the measly two layers! 

OK, so are you still wondering what I did with the first broken sponge? Well yes I obviously did munch on some but I was determined to make the rest go to GOOD use! Therefore I did the same thing as what I would do for my cakepops. I crumbed my broken sponge and added some coconut icing to make it form a 'dough' like texture...




I placed the 'dough' into a square tin and left it in the freezer for 20-30 minutes. I then poured melted chocolate over the top...






Time for some snow...I sprinkled a generous amount of desiccated coconut over the top and left it to set in the fridge for 5-10 minutes.





I then chopped away...



It got MESSY - don't say I didn't warn you!



It's chocolate coconut JENGA time!


I'm going to also pack these little pleasures up for Nan. If she doesn't like the cake then at least I have a back up!

Terry's chocolate orange muffins

Who ADORES these?



If the answer is YES to the above question then it’s time to grab your apron and BAKE these Terry’s chocolate orange muffins. I’m 99.9% certain that you will feel extremely satisfied after you’ve eaten one of these flavoursome treats. However, one will lead to two, and two will lead to three. Trust me, they truly are irresistible.

So lets start by breaking that delicious chocolate and chopping it up. At this stage the chocolate orange smell is so overwhelming you will probably find yourself chomping on a few segments! Mr Terry would be SO offended if we didn't, so go ahead and enjoy those segments (please try to save some for the muffins).



Don't worry about chopping the chocolate up too small - it's always nice coming across a generous amount of oozing chocolate isn't it? Also, feel free to put a little to one side so at the end you can melt and drizzle it on top of your muffins!

If you still have some Terry's left to make the muffins then you will also need the following:







  • 300g self raising flour
  • 1 teaspoon baking powder
  • 50g cold unsalted butter cubed
  • 80g caster sugar
  • Terry's Chocolate orange 
  • 2 eggs , lightly beaten
  • 225ml milk
  • 1 teaspoon vanilla extract


  • I followed the recipe from BBC Good Food which you can find HERE. As you have probably gathered I simply substituted the chocolate chips for the Terry's - an excellent substitute if I do say so myself! 

    Simply add your Terry's instead of the chocolate chips when you get to that stage...




    My mixture baked for around 18 minutes, I then drizzled some melted Terry's on top, captured a fair few photos and now I present you with my Terry's chocolate orange muffins...




    Dawn French needs to get her hands on these bad boys!





    I ran out of the plain melted Terry's but lucky enough my Sister had some dark Terry's chocolate so I drizzled this on top of the remaining muffins. The contrasting flavours of the Terry's actually work really well together so I'm thankful that I ran out of the plain!



    I treated Father to a pint of tea along with a Terry's muffin and a slice of my blueberry and lemon loaf (daughter points).
    The BEST thing ever is when you bake and people enjoy sampling your goodies and then give you positive feedback! I definitely can't see the Terry's lasting very long in this household.




    There's nothing better than watching a film in bed, snuggled up, with a hot beverage and cake (especially a film with Ryan Gosling in). Therefore I put Crazy, Stupid, Love on and indulged in my Terry's treat...

    If like me, you have a household filled with TERRY'S top fans, then I suggest you treat them to these muffins asap! You will be in their good books - I promise you (well until the last muffin has been eaten).

    Feed your imagination

    If like myself you are completely and utterly drained from the January diet talks, then this post is definitely one for you! From here onwards it's all about the chocolate talk! 
    Forget the lettuce, forget the green tea, and forget the gym. 

    I mean I'm NOT trying to promote obesity but please do me a favour and just EAT the chocolate bar if that's what your body is craving (in moderation of course). 

    We only live ONCE.
    Tomorrow is a mystery and we simply don't know what could spring upon us. 

    Life is TOO short to worry about calories and lbs so let your taste buds run free and embrace your inner chocolate goddess!!! 


    Today at work my beautiful friend Libby put a massive smile on my face. Can you guess why? Yep, she bought in lots of chocolate for me!
    All purchased from the amazing 'Hardy's Original Sweet Shop'

    I HAVE to show you these yummy treats as I feel like an excitable little child who has just been told she is off to Disneyland (come on, chocolate is equally as exciting). 

    Starting with some HEAVENLY HERSHEY'S...




    Like one wasn't enough...

    Actually, I take that back. I can't choose a favourite! Look at this Roaring Rocky Road slab...



    I can't wait to rip this beast open! Apparently 'Gnaw' have 28 flavours to choose from - OH MY! I have therefore decided that one of my aims for 2013 is to get my teeth on the remaining 27.
    An aim full of flavour! 

    Next, I present you with the 'Continental milk chocolate with Honeycomb crunch'...

    I definitely can't see myself disagreeing!



    Libby didn't stop there! She treated her chocoholic friend to some Butterfinger Bites which are apparently 'EASY TO EAT'.
    I wonder how many seconds minutes these will last me! One thing I do know is that they definitely won't be difficult to eat!




    To break up the chocolate taste I've also got some NERDS to munch on. Willy Wonka once said: 'You've got to feed your imagination' and I 100% agree. 
    Such wise words from Mr Wonka!




    As you can see I've got an AMAZING friend who understands that chocolate has to be eaten in style. 

    If you TOO want to join in on the fun (I don't blame you) then I insist you get yourself down to a Hardy's sweet shop. There are lots in London but do have a quick search to see where your nearest one is as they are expanding! Hardy's are famous for their vintage sweets from the traditional jars (hence why I have displayed my goodies on a vintage ornament). 

    Follow their twitter page HERE as it's looking a little lonely and I believe it should have 100,000 followers (if not more).   



    Anyway, I better dash, I've got chocolate to eat and tea to drink!




    Thanks Libs (or should I say Mrs Wonka) I couldn't wish for a better work buddy! You've made my Tuesday a tremendous day and I can't wait to suffer a sugar rush the Hardy's way!
